Taking into account the price difference, is the Specialized S-Works Tarmac SL8 still a better bicycle than the Canyon Ultimate CFR?

Your choice of bike between the Specialized S-Works Tarmac SL8 and the Canyon Ultimate CFR is purely a matter of preference, considering the kind of riding you engage in. As those who engage in the sport of racing may find justifiable cost differences, the Tarmac SL8 is claimed to be potentially faster and appears to be more race orientated. The Ultimate CFD, on the other hand, is less expensive and Allows for a more comfortable riding position which is good value for most people. Furthermore, the Ultimate CFD can offer the same level of configuration but with a more aggressive wheelset for the same cost, ensuring an economical option for those not willing to pay the Tarmac SL8 for Aero benefits.

You have to ask yourself if the $4,500 extra for the Specialized is worth the name badging on the frame?  The sweet spot in my opinion is the CF SLX 9 Di2.  It is now $6,499 and comes with Dura Ace R9200 w/power meter, top of the line DT Swiss ARC 1100 Dicut wheels w/180 hubs and a semi adjustable cockpit (bar width).  That config is even better spec'd compared to the Tarmac Pro, and still $2,000 less money.  The version I want, that is not available in the US (at this time) is the Ultimate CFR Di2 Aero in the Alpecin-Deceuninck Replica colorway.  It's an age-old dilemma, do you want a Rolex on your wrist or an Omega?  They both tell time, but one screams to your bro's "you're a Baller", even though you can't shoot or dribble for squat.

The Ultimate was on sale last month for 20% off.  Considering that — the choice is easy for me.
