Is there any instance whereby a US woman performed an unofficial function of a U.S president?

Unfortunately, Wilson suffered a stroke in 1919 which caused incapacitation on his part. As the first lady of America, Edith Wilson took charge and practically functioned as the President of the United States for more than a year. Such extent of her participation was treated as a matter of confidentiality and up to her death, she refuted any suggestion of holding executive responsibilities.

They should call Edith Wilson’s time in office the Edith Wilson precedent. She was handling her husband‘s affairs before the 25th amendment was enacted into the constitution.

If I may say so; she did an excellent job as the president’s proxy.
