Creating Custom Fan Curves

What steps should I follow to set up custom fan curves to adjust the speed of my PC's fans?

The Fan Control software allows for user enabled fan curves by designating a temperature source (CPU or GPU) and adjusting the graph that sets fan speeds in relation to the temperature input. The graphs can also be added points to outline at which range a certain temperature, fan will increase speed and which range a fan will decrease , thus allowing to maintain and adjust the cooling according to the noise level.

Not working properly ,doesnt even have an ok button to click after setting my graphs ,prob for windows 11 is not optimized

I have already tried twice to convince myself to the program, and each time I go back to the original software from the motherboard, because to this day I have not been able to set the program so that it does not run my fans from 20% to 70% only because I run any application, and I know that there are settings for this, but by god they do not work at all, what value I would enter nothing changes

I have a problem when i change the fan to 0 rpm none of the fans stops  so i can't identify the fans also my fans are connected to the nzxt controller

Anyone know how to keep the gpu fans off and only turn on during games or loads? The trigger curve doesn't work
